Apparently we will bin over 17 million Brussel Sprouts this Christmas!
But they are bursting with nutrition, and too good to throw away...
Being cruciferous vegetables, there's lots of vitamins and minerals, especially vitamin C and K. And they have more Glucosinolates (cancer protective properties) than all other cruciferous veg apart from broccoli. Add to traditional Bubble and squeak
Mix with red onions, walnuts, and feta cheese
Combine with eggs for a lovely veggie frittata
How about a spicy Cranberry, sprout & pecan pilaf
Fry with rosemary and chestnuts
Mix with mashed potato and fry them
Chop and fry with some bacon or pancetta, add balsamic for flavour
